Lingonberry Cream Cheese Brownie & TGIF

oOOos.. aaahHHhs..mMMMmmmmm..is ringing in my ears. Ultra dark, rich, moist, fudgey and satisfaction guarantee is my kind of comfort when sinking a bite into these LIGONBERRY CREAM CHEESE BROWNIE. Slightly mysterious looking aren't they, tantalizing the eyes, calling your name [Yes, you!] tempting and bewitching your mind to grab a slice. It might make you want to run off, locking yourself in the room, enjoying every single moment alone with them. Oh! don't let me stop you there, the star of the show is the light lingonberry marbled cream cheese making this rich fudgey brownie simply irresistible.

Last week, I originally had something interesting planned, and I desperately wanted to share the recipe with you. However, luck wasn't at my side and a minor accident happen in the kitchen. Looks like Miss Clumsy Pants [that's me by the way] was out having fun with a slicer when the slicer decided to bite her thumb. Ouch! I will probably spare you the gory description, but it was definitely yonks ago when I injured my thumb while using a slicer.

This time round, it's a different slicer and still my thumb got caught, and I had a really deep cut on my flesh.. Ouuwwwweeeee..ouccchhh. I think the slicer and Miss Clumsy Pants are not made to be a happily married couple, cause somebody always end up getting hurt, and it happens to be me. Funny thing happen too. I was jumping up and down screaming in front of the kitchen sink "oh! my god...oh! my god...oh! my god", as though that would help stop the bleeding. Thankfully I managed to stop the bleeding, but my poor thumb faced another trauma and it was like a lone ranger at that moment, shivering, quivering in fear telling the owner to be extra careful next time. Naturally, I ran up stairs leaving trails of ruby red droplets asking for help, and I was immediately taken to a nearby clinic to get it dressed up, and got a jab, to prevent any infection.Yup, I hear you Lefty Thumb, now bandaged in an awesome cute band-aid.
Instead, I turn to Martha's brownie recipe and whipped up a 1 bowl, okay maybe 2 bowls or was it 3 bowls brownie recipe. So easy, 1 bowl to melt chocolate, 1 bowl for the dry ingredients and 1 bow for the cream cheese mixture. Cleaning up was a breeze too, and you will have a treat under 1 1/2 hour (includes measuring, mixing, baking & cleaning up).

If you are due for spring cleaning, then this is perfect tea time snack. I changed the recipe slightly to suit my own palet, by using dark cocoa powder, 4oz semi-sweet chocolate, 2 oz bittersweet chocolate and added 2 teaspoons of pure vanilla extract. For the cream cheese, I added 1/4 cup mixture of lingonberry & raspberry jam mixed together with 1 tablespoon of Limoncello liquor (Oh! so..so good!!). Feel free to use any berry preserved or jam or just leave it plain, if you're not in a mood of swirling to create the marble effect. I am thinking this brownie will make a good pot luck dessert treat or as a Christmas gift too.

I think I'm easy to please, give me edible gifts or better yet, kitchen equipments (*hint*hint*..yoo..hoo, Santa?!?) and I will be a happy camper.

  1. Jo, I'm sold on the brownies. Let me at 'em! Whoa, sorry about your little boo boo in the kitchen. They should invent a thumb guard for you :) The last time I tried making a cream cheese brownie, I had trouble spreading the cream cheese topping. It kept getting mixed up with the brownie batter. I guess I just need more practice :)

    1. Thanks PH, my finger is recovering well. As for the marbling, sometimes I could get a nice texture, but sometimes I too will screw up. The only thing I tell myself is to not drag the brownie batter along into my cheesecake mixture. And I applied the jam last after I have spread my creamcheese batter. Next randomly spoon a couple spoonful of jam, and all over. Use stick the cake tester or toothpick into the cream cheese or jam and drag inwards or outwards or in spirals to create any effect you like. Hope that helps! xoxo

    1. Lizzy, this brownie is seriously sinful. Really fudgey, dark and rich. My family took a bite and they were on Cloud 9 after that.. LOL. Thanks for the concerned, and my thumb is healing well. At least I am off the band aid now. xoxo

    1. Eli, can you believe it is 1 year already since we last met? Time is certainly not on my side.. that's how I feel. SO many things to experiment on but so little time. I know that time is how we depict and decide, but I wish weekends would go by much slower. Hopefully we will have another good time again. Hugs, Jo

  6. First of all, I'm sorry you got hurt but accidents happen in the kitchen :)
    Second, your brownie looks far much better than the one on Martha's. I'd love to take a big slice and enjoy it alone with out any disturbance.

    1. Thans Jaime, it's healing slowly but somehow it's feeling a lot more sensitive now, so I really have to be more careful the next time I use any sharp blades :)
