Since I'm in the mood for the holidays, let me present to you my all time favourite nutty PECAN PIE with SALTED CARAMEL is a classic. There may not be a lot of people around me know, that I have a soft spot for them. Just a slice of this luxuriously crunchy, caramelized aroma and taste pie is enough to make your knees wobble. Pronounced either as "pee-CAN" or by some as pee-KAHN", this is one Classic Pie that is perfect for the holidays. So start cranking up the oven peeps!
This PECAN PIE with SALTED CARAMEL is easy to bake. Almost quite fuss free, apart from just a little effort required to make a pie dough from scratch. There are several recipes of pie dough. Some recipe calls for vegetable shortening, lard or butter. My personal favourite has to be with butter. I never really like using shortening or lard and that is because, to me it's just not butter. Butter has a nice creamy, richness which makes the dough crumbly and flaky. And the aroma when combined with vanilla beans or vanilla extract is heavenly.
The pie filling is seriously delicious. It has a nutty caramelized taste. Since I love texture, this PECAN PIE has doubled amount of chopped Pecans and then lined with more Pecans. Extra Pecan equals extra crunch.
What's more perfect is that you could either have this pie warm or at room temperature. To compliment this pie, I made some Salted Caramel and drizzle it over the top. Or for a richer indulgence, you could warm up the pie, and serve it with a scoop of good vanilla ice-cream and finish off with some salted caramel syrup. Now that is comforting and perfect for any holiday season!P/S: As I am collaborating a small business with my friend, I am unable to share the recipe at this point of time with you.
