While I know it's not Valentine's Day now, but I have always had a mad obsession over Red Velvet Cake. I have to say, amongst most of the cakes I baked or maybe buy from a bakery, I truly heart Red Velvet Cake.
Recently Foodbuzz sent out a challenge on "do-over" recipe. I just knew that instance that I must take part in this "do-over". At that time, I wasn't even sure if I will be selected for a "do-over" recipe. To be honest, I have baked so many cakes that I wish I wrote down the recipe or even snap prettier photos to share them here with you. Unfortunately, I have missed out on that. But what I do know is, I have a list of cakes to "do-over" and will share them with you over a span of time.
As for Foodbuzz's challenge on "do-over"? The first thing that came to mind is the L.O.V.E cake I baked previously which so happens to be a Red Velvet Cake. I love it's depth of flavour, the richness of the buttermilk that give that cake batter that tang and yet creates such a light fluffy cake. And then, the cake is frosted with tangy Cream Cheese Frosting. What's not to love about Cream Cheese Frosting? It's such a versatile frosting that suits a lot of other cake flavour. For instance, dark chocolate cake, butter cake, vanilla cake, orange cake, lemon cake, blueberry & raspberry muffins, or even works well with chocolate cake with peanut butter frosting. You see what I meant by versatile?
While the recipe I used previously is good, but it wasn't quite there yet, as I thought it was just lacking of something. The cake was not as dense and moist as I have hoped for, and the tang of the buttermilk in the batter was just not there. Previously the cake was sandwiched with cream cheese frosting. Plus I decorated the cake in a hurry, and thought that my photos were so-so. I can be a little hard on myself when it comes to creating something lusciously delicious, or so I think most times.
In a way, you could say that it's a curse of being a foodie. However, I always am happy to take feedback from my family or friends and try to revamp my recipes to make them close to perfection. Today's Red Velvet Cake is a slightly different recipe, that makes 3 layers of 6-inches round cake. In between them is sandwiched with semi-sweet chocolate ganache and the outside of the cake is frosted with light fluffy cream cheese frosting. I found this combination to work pretty well, as the chocolate ganache adds additional depth in flavour, and the cream cheese frosting completes the overall taste of the Red Velvet cake. It's slight tangy and sweet from all the combination when put together.
Having this second chance means I get to play around with the frosting design. I think went back to my sort of pink roots and frosted some ruffles that resembled a Gerbera Daisy's petals. I just love the look of my Gerbera Daisy Cake in my past post that this time round I decided to make it in Red-ish or is it slightly Pink-ish in colour. I thought I put my darker chic side a rest for this week, and welcome back my girly pink chic side.. LOL.

However, kudos to you for continuing to tweak recipes until you find that perfection according to your personal tastes. Red velvet is such a classic, however, you have managed to make yours very unique in presentation and no doubt it is one delicious dessert!

DeleteI love red velvet cake. I had it the first time at the Regas Restaurant in Knoxville. A downtown landmark that had been operating for 90 years before closing last year. It was where I taught my son how to hold a lady's chair and behave like a gentleman. ...and all from red velvet cake. :)
