Baking Recipe: Lime Jelly Cheesecake

My dad's birthday is coming up this week, and I thought I surprise him with a simple classic old fashion cheesecake. On regular days, I would usually have a tough time deciding on what cake to bake and for who.

But for him, the answer is quite simple. From what I can remember, we used to love Sara Lee's frozen strawberry cheesecake. Those were the good old days where I will stroll along together with my dad along the frozen section. I would be spoilt for choices, but there will only be one thing my dad requests my mom to add to the grocery list. And that would be a box of frozen ready made CHEESECAKE.

Now that I have started my journey on making home baked treats, I would love nothing more than baking a cake for all my family members whenever their Birthday is round the corner. It's such a perfect excuse for me to experiment and share my sweets.

While I think deeper, I don't just want an old fashion cheesecake? This time round I will be jazzing up my dad's birthday cake. A couple years back when I started baking once more, I would love to make my dad a variety of cheesecakes. However, my dad is easy to please. He just loves his cheesecake simple and fuss free. Lol..

As usual, me being me, I love to challenge myself and crack my head on thinking how I could make it easier for you readers and also add a little twist, a little of Chic-ness that resembles a small part of me. I have made my dad Strawberry Cheesecake, Lemon Cheesecake, Oreo Cheesecake, and this year will be a twist to a classic. I made him a Lime Jelly Cheesecake. Instead of using lemon juice, I have swapped it with fresh lime juice, and lots of lime zest for the citrus kick. Then, I added a layer of lime jelly in between 2 layers of the creamy lime cheesecake for that extra zesty tangy lime flavour and bite creating 3 different textures. The base as usual is my favourite, made from crushed digestives which compliments the Lime Jelly Cheesecake making the entire treat ultra light and perfect for any day. A Birthday cake will not be complete without frosting. The Lime Cheesecake is frosted with light pastry cream. Delish!

I hope you will give this cheesecake a try. I assure you it's decadent and simply irresistible. Right now, I can't wait to see what my dad has to say. I think my family will  have some fun debating what looks good on the plate, or what tastes or don't taste good. That would be fun.. I think :).!

    Your dad must be thrilled to get this gorgeous/chic "go green" cheesecake! I've been on a cheesecake binge lately and have just made a mango version.

  3. Hi Jo-such an amazing, beautiful color, and creative cheesecake you've made combining with the lime gelatin. In the seventies, and eighties, I remember we had a "revolution" of JELL-O brand all color and flavors of dessert creations, and it just faded out of style! ...don't know why, but lately I've noticed it made a comeback again.
    Sad to say, I can't convince my family to like gelatin based desserts, but I'll tell you, it was a huge sensation of fabulous desserts with the JELL-O brand gelatines and I'm so glad that a new trend of that has begun again!
    Bottom line: Your cake is magnificent and I would love to sample, just "one bit" (have to stay away from too much sugar)

  11. Happy birthday to your dad! This is such a lovely creation, wonderful festive colors. Lime cheesecake is a favorite of mine and seeing the extra bonus of the lime jelly running through this sure makes me wish I had this for my last birthday. That layer is one sure fire way to get a big pop of delicious lime flavor-yum! Awesome creation!
