What a packed whirlwind week. I am glad it's finally Friday and really looking forward to a lazy weekend. For me, making simple pies with no fuss is therapeutic. I am a huge fan when it comes to serving everyone with their own individual pies, tarts or this simple classic MINI APPLE & CRANBERRY GALETTE. While I too love the huge classic pie, sliced into slices, but I truly love the idea of everyone having their own portion. No body has to worry of not getting enough. Plus it makes serving them individually pretty, and special.
In the next coming months, you will get to see me venturing into other recipes which I have been meaning to try. A long list with not a lot of time..
While I have tested several pie dough recipe from different magazines or pastry chefs, the galette dough recipe is adapted from David Lebovitz's amazing book, if I say so myself titled "Ready for Dessert". This is possibly my new favourite pie dough, with some minor tweaking to cater to the weather in the country I live in. It's light, flaky and crunchy around the edges. Almost like a butter cookie that melts in the mouth. Delish!

Apple, Cranberry & Walnut Pie with Apple Crisps
It's beginning to 'smell' a lot like Christmas [humming the tune in my head] in early September in my kitchen. Ahh! the aroma of cinnamon, vanilla bean, apple, cranberry and walnut lingered throughout the day as I prepared my APPLE, CRANBERRY & WALNUT PIE with homemade APPLE CRISPS. Don't you just love the classics? Rich classic flavours with a twist. Not only these pies are made to individual portions shaping like individual gifts, they are served freshly baked out of the oven; each topped with good ole' fashion vanilla ice-cream, caramel syrup and apple crisps.

Baking Recipe: Apple and Blueberry Pie with Vanilla Bean Sauce
How does an apple and blueberry pie sound to you right now? Don't you think a freshly baked apple pie served straight out of the oven sounds divine? Would you care to have one? Not only that, I made them in pocket or mini sizes.. is that how I should put it? Instead of a large pie, I wanted them in individual servings. So everyone could have their little pocket of warm goodies.
Each apple and blueberry pie will be served with chilled creamy vanilla bean sauce. I like how this simple pie can satisfy any crave. It somehow makes you feel warm, cuddly and would probably like to snuggle up under a throw over.

This recipe does not really require you to have fresh blueberries. You can use canned or like me; I always keep a stash of the berries frozen in my freezer. So when you need some berry goodness, just take it out and whip up some muffins or bread or a mini pie. If you're feeling a little blue, or coldness of fall is kicking in; try baking some of these. Make some extras, and its good to freeze up to a month. Just heat up the oven and pop them in and bake till they are golden in colour. Serve them with your favourite custard sauce, or have them plain or with some good old fashion vanilla ice-cream. This will certainly help fight those cold nights, or kick some blues away.
