Mini Apple & Cranberry Galette & TGIF!

What a packed whirlwind week. I am glad it's finally Friday and really looking forward to a lazy weekend. For me, making simple pies with no fuss is therapeutic. I am a huge fan when it comes to serving everyone with their own individual pies, tarts or this simple classic MINI APPLE & CRANBERRY GALETTE. While I too love the huge classic pie, sliced into slices, but I truly love the idea of everyone having their own portion. No body has to worry of not getting enough. Plus it makes serving them individually pretty, and special.

In the next coming months, you will get to see me venturing into other recipes which I have been meaning to try. A long list with not a lot of time..
While I have tested several pie dough recipe from different magazines or pastry chefs, the galette dough recipe is adapted from David Lebovitz's amazing book, if I say so myself titled "Ready for Dessert". This is possibly my new favourite  pie dough, with some minor tweaking to cater to the weather in the country I live in. It's light, flaky and crunchy around the edges. Almost like a butter cookie that melts in the mouth. Delish!

Oreo & Earl Grey Ice Box Pie & TGIF!

At last, it's Friday and perfect for a long gone TGIF post. As I gaze upon the window, gloomy weather is the forecast of the day and perhaps a thunderstorm coming upon us. Then as I scout around a very quiet workplace and with the air conditioning on at full blast, I feel a sense of chilliness that's making me crave for a hot cup of cocoa.[slurps...]. While I know it seems like it has been forever since I last posted, I do have a valid reason. If you followed me on Instagram, then you may have seen some mouth watering photos and amazing scenic view. To sum up, I was away on a family vacation. So I am back, for those of you who missed me and I will strive to keep on posting whenever I can [brownie's promise!]. 

While I may not have a recipe for you today just yet, but I hope this post will inspire you. Ever wonder what to make out of some left over baked goods? How many times have you thrown off some scrap or what do you if you have a left over cookie dough? Don't toss them out. There are several times I have tossed out extra batter thinking I will not be doing anything to it. This time round, I challenged myself using some left overs [which have not been eaten or touched of course] and came up with [what I personally think.. is a crazy idea]; also happens tastes good is an OREO & EARL GREY ICE-BOX PIE.

The layers? At the very bottom, sits a thin layer of buttermilk dark chocolate cake, then layered with a thin layer of earl grey mascarpone cream, then followed by a layer of home baked graham crackers. While it didn't end there, I slathered some melted dark chocolate spread and finally topped the entire pie with Jello's instant mix Oreo Pudding. To garnished, I chopped up some dark and semi-sweet Sharffen Berger's chocolate bar. Simple enough? Doesn't it make you drool? How would even think this came from left over batter?

Boozy Banana Cream Pie


Talk about starting off my holiday mood early. Ever wonder what to do with left over banana? Banana is one of those fruit that when ripen it turns black really fast. So instead of letting it go to waste and tossing it out in a bin, try making some banana pudding, smoothie or better yet, give this pie a try. Whenever I think of a dessert with banana, it somehow ends up being something decadent and satisfying.

Here's a little secret too. I really love this fruit in almost any possible way you could think of adding to a treat. Banana splits, Pancake with sliced Banana, Bacon & Maple Syrup, Chunky Monkey Milkshake and how about a BOOZY BANANA CREAM PIE (a grown up version)?

Apple, Cranberry & Walnut Pie with Apple Crisps

It's beginning to 'smell' a lot like Christmas [humming the tune in my head] in early September in my kitchen. Ahh! the aroma of cinnamon, vanilla bean, apple, cranberry and walnut lingered throughout the day as I prepared my APPLE, CRANBERRY & WALNUT PIE with homemade APPLE CRISPS. Don't you just love the classics? Rich classic flavours with a twist. Not only these pies are made to individual portions shaping like individual gifts, they are served freshly baked out of the oven; each topped with good ole' fashion vanilla ice-cream, caramel syrup and apple crisps.

Baking Recipe: Creamy Peanut Butter Pie (Non-Baked) & A Tribute


As a lot of you fellow bloggers know, there has been a lot of tribute to Jennie from In Jennie's Kitchen and her family. After having re-directed from Ann at Cooking Healthy For Me to Jennie's blog, that's where I discovered something sad had happened and her story brought me to tears and a sudden ache in my heart left me questioning myself. Do we live our life from day to day or do we always complain that it's never good enough? Right now, I know I am learning and trying hard to make the most of everything every single day.

Being brought up in an Asian community, we are not used to show our love towards our love ones openly, as where we rarely utter the words "Mom, Dad.. we love you and thank you for everything". These words are not said out loud; guilty I know..however, we do show them in other ways.

Jennie's story is so deep that I feel it's also a lesson to all of us, to always learn to cherish what is in front of you, stop finding fault in one another, learn to grow as better individuals and most importantly, keep showing LOVE to our love ones like there is no tomorrow. Jennie's message to everyone was to help her and her family heal is to make Creamy Peanut Butter Pie. For the Creamy Peanut Butter Pie, this will be my own recipe, as I tend to work with what I have in my pantry.

This post is a tribute to everybody who matters most in my heart, who have helped me along the way to become a better daughter, god daughter, friend, aunt and a lady foodie blogger in a making. I feel no words could ever describe my gratitude and my countless of profound love and care towards you. To all of you out there, whether you loss a love one or closest buddy a not, let it not be too late as I always live on this motto "better late than never". So, it is never too late to start today!
