What a packed whirlwind week. I am glad it's finally Friday and really looking forward to a lazy weekend. For me, making simple pies with no fuss is therapeutic. I am a huge fan when it comes to serving everyone with their own individual pies, tarts or this simple classic MINI APPLE & CRANBERRY GALETTE. While I too love the huge classic pie, sliced into slices, but I truly love the idea of everyone having their own portion. No body has to worry of not getting enough. Plus it makes serving them individually pretty, and special.
In the next coming months, you will get to see me venturing into other recipes which I have been meaning to try. A long list with not a lot of time..
While I have tested several pie dough recipe from different magazines or pastry chefs, the galette dough recipe is adapted from David Lebovitz's amazing book, if I say so myself titled "Ready for Dessert". This is possibly my new favourite pie dough, with some minor tweaking to cater to the weather in the country I live in. It's light, flaky and crunchy around the edges. Almost like a butter cookie that melts in the mouth. Delish!

DeleteJo, you're the third food blogger whose apple galette I have seen. Each of your galettes are slightly different, and that's the best part about it. Everyone is an individual with their own creations. Love your cute little apple galette, with the addition of the cranberries. I have commented to you the last time as well, but you have not come to my blog...guess you're busy with work and life in general, as we all are! ReplyDeleteHi Eli! My dad loves apple pies and I thought it's best I make him something light and not too heavy. So came the Apple Galettes. I am suprised that the shell is buttery and crumbly. Will certainly be using this recipe a lot more often now :). Hope you are well and take care of yourself. I will do my best to come by to check up on all of you whenever possible. ♥ ♥ Jo

I have that same David Lebovitz book though haven't gotten round to trying the galette recipe. My fav so far is the blackberry financier, which I probably should make since it's in season now. I am also loving those pretty plates!!
