Madeleine au Citron with Citron Honey Glaze

I had been taking a while to draft this post, and when I  finally did, disaster happened! Coming from a tech savvy environment, I have always saved my work, for this matter, this post. And then, the post was accidentally removed and blogger saved a blank draft for me. Oh gosh! The agony and pain for me to think all over on what to share with  you was tougher than I thought. Sometimes, I feel that technology can be a pain and at times it's handy to our daily needs. It allows us to communicate and stay in touch with one another from far away land with just a click away; whereby a snail mail may take up to a week or two before it reaches it's designated destination. Then again, doing certain things the old fashion way makes it more memorable and meaningful too.

So last weekend, in brief I finally had time to catch up on some movies that I missed out. Ah! yes, it's starting to come back to me now. I watched Alice in Wonderland (the movie) and not the cartoon; although I must say, I do enjoy the cartoon a lot more. Yes, finally peeps! Can you imagine? To make the experience memorable, I whipped up some dainty French Madeleines. Yes, that's right. I will find any excuse to indulge over the weekend. Not just any plain madeleines. It has to be MADELEINE au CITRON with CITRON HONEY GLAZE.

To break it down....

First, I infused the melted butter with freshly grated orange zest and tore a packet, emptying the content of my favourite English BreakfastTea. Basically, I was thinking along the lines of Orange Tea Madeleines. Sounds delish enough? Let me just say, if there was a smell-i-cious blog, I would capture the aroma and share it with you here. My god, my kitchen was filled with the heavenly aroma. And what came after, was even better.

As if that wasn't enough, I didn't want my stripped naked orange to be just eaten as a fruit. Instead, I juiced them up and added honey to it. What did I get? An Orange Honey Glaze. Yum! Doesn't this sound tempting? 

Boy! what a sheer pleasure. Let me be honest. I couldn't quite recall the story of the Alice in Wonderland movie. Instead, all that was going through my mind and remember fondly of were these madeleines. ORANGE + ENGLISH BREAKFAST TEA + MELTED BUTTER + HONEY = GOOD EATS!

Madeleine au Citron with Citron Honey Glaze

* Makes 18 pieces of Madeleine.
* Madeleine is best consumed the same day.
* Store in airtight container in room temperature between 2-3 days.

 INGREDIENTS

Madeleine au Citron
125g unsalted butter, melted
125g caster sugar
125g all-purpose flour, sifted
1 teaspoon baking powder
3 eggs, room temperature
zest of 2 small oranges or 1 large orange
1 packet of English BreakfastTea, the content
1 teaspoon pure vanilla extract

Citron Honey Glaze
1/2 tablespoon cornstarch
1/3 cup orange juice
2-3 teaspoons honey

          

DIRECTIONS

To prepare madeleine au citron:

1. Preheat oven to 180°C. Melt butter, orange zest & content of English Tea (grinded tea leaves) in a small saucepan over low heat. Once melted, set aside to allow the orange zest and English Tea to further infused the melted butter. With a pastry brush, grease madeleine pan with a little of the melted butter and sprinkle some flour. Set aside.

2. Sieve flour and baking powder in another bowl. In a mixing bowl, place sugar, eggs, and vanilla extract and whisk until smooth. Gradually then whisk in flour mixture. Lastly using your whisk fold in melted butter and making sure to not over mix. Batter should have no lumps and ribbony in texture.

3. Transfer to a piping bag and refrigerate for 30 minutes. Pipe batter into each mold until 3/4 full. Bake for 8-10 minutes or golden and springy to touch. Set aside to cool for about 10 minutes or so. Use a small knife to ease the madeleine out if you're not using a silicon mold.

To prepare citron honey glaze:

4. Mix together cornstarch and juice. Then transfer into a small saucepan. Let it simmer on low heat until mixture thickens slightly or coats the back of a spoon. Stir in honey and mix well. Set aside to cool. Serve madeleine alongside with citron honey glaze. ENJOY!
