December is a month of celebration, and happens to be a favourite month of mine. Lots of birthdays, and feasting. A perfect time of year to reflect all that has happen before moving into the New Years. To continue to celebrate, I made these oh! so simple ultra smooth, melt in the mouth IRISH-CREAM MASCARPONE TRUFFLES. They are seriously dark and rich, and a perfect gift to any chocolate lovers out there. Who says celebrating is always about cake?

Now, moving on to something sinful that I am dying to share with all of you chocolate lovers out there. I have been insanely addicted to Irish-Cream & Coffee, and instead of a child friendly truffle, I kicked up a notch making it "extra boozy". This is what us adults [ahemm..] should be indulging in. To make a basic chocolate truffle, I loosely adapted the recipe and directions from here.
Instead of 8-ounces of dark chocolate, I mixed half & half [5-ounces of semi-sweet + 3-ounces of dark chocolate]. Heat the cream, and then pour over the chocolate, stirring continuously until chocolate melts, and thickened. Once chocolate has cooled down slightly, add in 1/4 cup of mascarpone for extra richness, 2 tablespoons of Irish Cream and 2 teaspoons of coffee essence. Coffee always brings out the undertone flavour of a chocolate. This truffle is perfect to use in cupcakes too or better yet, serve it after a dinner with a cup of coffee or tea. The flavours are simple and decadence at it's finest.
It is certainly an amazing adventure so far, and I have a lot plan up my sleeve. Till then, have a wonderful week ahead!

DeleteYour photography is always wonderful, but these pictures are exceptional! The styling is perfect for those scrumptious dark chocolate truffles. If I were to make these truffles, I could easily be quite greedy and keep them all to myself - definitely not the spirit of the season. :)
