Mini Blueberry & Lemon Marbled Cheesecake

From my kitchen to you, I bring you my "post" Chinese New Year treat. Nothing Chinese or Asian about it really. As Chinese New Year draws to a close and with an entire week filled with over indulgence at reunion lunches & dinners, has left me yearning for small, light, creamy, fluffy melt in the mouth individual MINI BLUEBERRY & LEMON MARBLED CHEESECAKE. Like that is ever going to help right? But hey! my friends and I used to joke that we have two stomachs. As long we hear those magic words "Dessert anyone?", our eyes lit up like twinkling Christmas lights and suddenly all those feeling of not being able to ingest another food is gone. Sometimes, I'm glad that my groupie shares the same love with me. Otherwise, I will likely feel like a little piggy in that dark cold corner..LOL.


The blueberry marbled cheesecake is complimented with a crunchy blend of gingersnaps and buttery shortbread cookies for the base, with each zesty lemon creamy cream cheese is then swirled with generous amount of homemade blueberry maple jam. Instead of the regular whole cheesecakes I made in the past, I decided that everyone should have their own ones. For the dessert lovers in my family who wants to go for second and third helpings, they certainly can have it without the guilt.
Next, I am happy to announce that Vanille Magazine: Issue 3 in English is finally out. Do stop over, browse through as there are heaps of amazing mouth watering recipes with gorgeous photography from Vanessa and collaborators. We truly appreciate all the support given and ill certainly continue to come up with more amazing posts.
As for the MINI BLUEBERRY & LEMON MARBLED CHEESECAKE recipe, click here for the cheesecake & here for the blueberry maple jam. I always stick to my trusty chilled cheesecake recipe and switching it up by adding lemon zest, vanilla bean adding the top with blueberry maple jam and made swirls to mix both the mixture together. The recipe yields approximately 24 medium sized individual cheesecakes.

  15. Jo, what a devil you are when it comes to these evil treats hee..hee....These mini cheesecakes are so gorgeous and I am now on my post CNY diet. As long as you don't dangle the cheesecakes in front of me I'll be fine or else I will cave in to temptation. Sigh......
