Lemon, Elderflower & White Chocolate Trifle


Another week went by and lets kick start this week with LEMON-ELDERFLOWER & WHITE CHOCOLATE TRIFLE. Not your average trifle and it's purely for food lovers who wants a quick fix and be out of the kitchen in a jiffy say approximately less than 30 minutes (includes prepping, and washing up). Are your eyes sparkling up and brain screaming " Hell yeah!".

The LEMON-ELDERFLOWER & WHITE CHOCOLATE TRIFLE is super light and yes! another refreshing treat to have your guests or family talking.
So the weekend was a lazy one. I thought I baked so much that you all would probably forgive me with this ultra simple with minimal cleaning up, and of course a delicious post.

This trifle is perfect for those who doesn't like sweet treats too sweet. Well, they don't call them sweets for nothing..LOL.. no pun intended ;P. However, having my grandpa around, and knowing my family love treats and not the ultra sweet stuff, this trifle would be just right. It seems like I have been making them happy every weekend with all the goodies I concocted. Okay, they might blame me later on for expanding their waist line. LOL.. however as guilty I can be I am doing it out of love. Some kind of love right? Well, I always think that if I can't say it out, I put all my effort into everything I do or make. Feelings and emotions solved!
If the photos still don't change your mind, let me break it down in layers. A single base pudding recipe [hoorah!], divided into 2 flavours [a layer of tangy Lemon pudding and a layer of mildly sweet Elderflower White Chocolate pudding], then layered with crunchy and healthy digestives cookies. All that is required is patience during assembly stage, and restraining for licking off the spoon. If I could survive it, I'm sure you could too. A light creamy smooth tangy trifle is sure to get your family or guests talking even after a satisfying meal.


Lemon & Elderflower Trifle

*Makes 10-12 individual shot glasses
*The pudding will be flavoured with Lemon juice and Elderflower syrup, hence I used lesser Vanilla Extract.
*If you worry there are lumps formed, sieve the pudding.
*Pudding can be made in advance, chilled overnight in the fridge kept up to 2 days in an airtight container.
*ONLY assemble trifle 15-20 minutes earlier if you are ready to serve.
*Serve immediately.

INGREDIENTS
Basic Pudding
3 cups milk (whole or low fat)
1/3  cup + 1 tablespoon cornstarch
3/4  cups caster sugar
2 teaspoons pure vanilla extract
125g crushed digestives (for assembly
stage)

Lemon Pudding
1 1/2 cups basic pudding
5 tablespoon lemon juice
3 teaspoons lemon zest
1 tablespoon sugar (optional)
2 tablespoons Limoncello (optional)
1/4  teaspoon Yellow food colouring

Elderflower-White Chocolate Pudding
1 1/2 cups basic pudding
1/3  cup white chocolate, cut into  
small chunks
3 tablespoons Elderflower syrup


          

DIRECTIONS
1. In a jug, mix together all of the basic pudding ingredients. Use a spoon or whisk to help blend the
corn flour in the milk. (This will help to avoid lumps from forming while cooking the pudding).

2. To prepare Lemon Pudding, pour 1 ½ cups basic pudding mixture into medium deep saucepan.
Add lemon zest and lemon juice, and optional additional 1 tablespoon sugar to taste or if it’s too
sour to your liking. Cook lemon pudding mixture over medium heat until mixture thickens coating
the back of a wooden spoon. Alternately, let it simmer until you see little bubbles forming at the
side of your saucepan. Take it off the heat, and add in Limoncello. Pour into an airtight container
or bowl, and then cover with a cling film by pressing it down onto the surface of the pudding to prevent
skin from forming.

3. To prepare Elderflower-White Chocolate Pudding, pour the remaining 1 ½ cups basic pudding
into another medium saucepan or you can opt to use the same saucepan. (Make sure to wash
the saucepan). Over medium heat, cook basic pudding mixture until it simmers. Once the mixture
is hot, add in white chocolate. Using a whisk or a wooden spoon, keep stirring to help the white
chocolate melt. Let it continue to simmer until the mixture thickens coating the back of the wooden
spoon. Take it off the heat and then only mix in Elderflower syrup. Apply the same step by pouring
pudding mixture into an airtight container or bowl, followed by covering with a cling film; pressing it
down onto the surface of the pudding to prevent skin from forming.

4. Chill in the fridge for 4 hours or overnight. Pudding mixture will thicken further after once its’
cooled. To assemble, crush ½ a packet of 250g McVites Digestives (approximately 8 biscuits). Scoop
a layer of lemon pudding, followed by crushed biscuits, then layer with Elderflower white chocolate
pudding and then followed by crushed biscuits. Repeat the layering until the shot glasses are full.
To serve, top with some crushed biscuits, or sprinkle some toasted Almond flakes. ENJOY!

    1. It's actually a lid of a really old cookie jar. I really love turquoise or aqua and pink. Somehow the blend really well together. You sure know how to make this young girl blush and smile ;)
